The Unique Wines of Cascina Gilli

I am always interested in tasting wines from a producer whose wines are new to me. This was the case when Alessandra Pieretti from WellCom Public Relations and Communications  Services located in Alba, Italy, invited me to meet Davide Gasperini, sales and marketing directer at Cascina Gilli. We agreed to meet at Il Gattopardo, one of my favorite Italian restaurants.

Davide told me that he had lived in San Francisco and attended the University of California, Berkeley and was offered a position there after graduation, but he turned down that opportunity and decided to go back home to Piemonte because he missed it.

He has a passion for the wines of his region and the winery, especially the unique Freisa and Malvasia di Schierano grapes

Davide said the company is located just outside Castelnuovo Don Bosco, in the Monferrato Astigiano hills. It was started by Gianni Vergnano in 1983. Today Gianni’s son Paolo Vergnano heads the company

The vineyards are located in the heart of Asti Province, in a valley composed of Marne di Sant’Agata (white soil). This soil contains blue-grey clay-like rock, a limestone matrix ideally suited to viticulture, providing the grapes with great richness in body and aroma.

Davide spoke about the Freisa and Malvasia di Schierano production.  For the vinification of the Freisa grape they have developed the technique of svinacciolatura, a process to remove the grape seeds during the déléstage stage, providing for greater softness in the wine, without compromising the freshness.

Refinement of the wines at a pre-bottling stage, for Freisa in particular, is carried out in concrete containers, in order to give it greater micro-oxygenation.  This process is carried on into the classic steel tanks. Over the years, particular attention has been paid to the further maturation of the product by aging in oak barriques for the second, third and fourth passages.

For Malvasia, long periods of maceration of the skin at cold temperatures make the product especially structured and intense, giving it a bright, intense color.

Freisa D’Asti “Il Forno” DOC made from 100% Freisa from Vigna del Fornoa single vineyard selection on the estate. “Bricco Gilli” is an amphitheater-like slope with a south/south east aspect which surrounds the estate. The vineyard is at 300 meters and the soil is moderate particles of lime, sand and clay (loam). There are 4,200 plants per hectare and there are both young and 40 year old vines. The vines are traditionally trellised, head trained with replacement cane pruning system (guyot). Harvest is by hand when the grapes reach the perfect aroma and flavor concentrations, and balance between aromas, acidity and phenolic components. Maceration lasts for 7 days, with pumping over (remortgage, rack and return délastages) and drawing off the seeds. The wine has hints of  raspberry and plum, $17

Barbera D’Asti DOCG Superiore “Dedica” 2020 made from 100% from the Schierano vineyard, at an altitude of  440  meters. The slope has south/southeast aspect so the solar radiation can reach the grapes early in the morning. In the Schierano part of the municipality of Passerano Marmorito (AT), the soil has a prevailing limestone matrix component. There are 4,300 plants per hectare. The vines are between 40 and more then 70 years old and are head trained, replacement pruned guyot system. Davide said the low yields, the typical small and over-ripe grapes, the frequent pumping over and the maturation in barrique have led to a great aroma intensity and an elegant fruit and finish. The wine is aged for 12 months in barriques of which 20% are new and for about another 12 months in the bottle before release. This is an intense fruity wine with hints of cherry, plum and violets, balsamic notes and a touch of licorice in the long finish. Davide said the label is dedicated to a selection of grapes of their domain. Barbera has always been grown here and expresses its character at its best. $18

Albugnano Superiore “Notturno” 2021 made from 100% Nebbiolo from Schierano vineyards, facing south/southeast. A microtone with marly matrix soil, rich in calcareous, at 440 meters. Very small production from the highest and steepest slopes of Monferrato. Some vines are new while others are 40 years old. The training system is traditionally trellised, head trained with replacement-cane pruning system (guyot). There are 4,300 vines per hectare. The grapes are hand-havested the first half of October, destemmed and crushed. The skin contact lasts more or less 10 days in a controlled temperature stainless-steel vat at a temperature of 28° C. The wine is then racked in French barrels, where it can gain complexity from the barrel itself and from oxygen interaction. The wine is aged for 12 months in French oak barrels and 6 months in bottle before release. The wine has hints of raspberry, pomegranate, violets, with a touch of tobacco and a trace of vanilla. The long finish has fruity and spicy notes.

Freisa D’Asti Superiore DOC Arvelé 2018 made from 100% Freisa D’Asti from the Cornareto Cru inside the Romanesque Astigiano.  The best grapes are selected from the slopes better slopes facing south/southwest at 360 meters.  The soil is rich in sand particles with good drainage. There are 4,100 plants per hectare with vines up to 40 years old. Training system is traditional trellised, head trained with replacement cane pruning -guyot. The harvest is in October, when the grapes are slightly overripe. The production aim is to maximize the extraction from these overripe grapes, with a very high skin-pulp ratio. 10 days of maceration to extract a lot of color and aroma compounds and precursors, soft and ripe tannins. The wine is aged for 18 months in French barrels and at least 12 months in bottle. It has hints of ripe fruit, jam, pepper, and coffee with a touch of leather and a balsamic note.

Davide said Freisa d’Asti is the appellation which best expresses the effort of Cascina Gilli with this variety.  Arvelé (“revelation” in Piedmontese) was born to bring this variety to the highest level. Cascina Gilli has always believed in the strong identity of Freisa as a noble grape from which obtaining great wines which can age. $18

Malvasia Di Castelnuovo Don Bosco DOCG “Gilli” made from Malvasia di Schierano 80% and Malvasia Lunga 20%. Davide said these are ancient grape varieties for which Cascina Gilli feels the role of custodians. The grapes are from “Bricco Gilli” cru which surrounds, with an amphitheater-like shape, the estate with a south/south-east exposure. The vineyard is at 300 meters and there are 4,200 plants per hectare. The soil is of a marly characteristic with balanced particles of sand, silt and clay. Vines are up to 40 years old traditionally trellised, head trained with replacement-cane pruning system (guyot). The grapes are hand-harvested, destemmed and gently crushed to avoid the extraction of unwanted components from the seeds. Then skins and must stay in contact for some days at low temperature, to extract color, delicate aromas and flavors and to avoid oxidation, microbial spoilage and unwanted fermentation to start. After this contact the must is drawn off the skins, filtered and stored at low temperature, to retain the acidity and the fruity characteristics. As needed, the must is transferred yo stainless-steel tanks where, according to the Asti Method with the inoculation of selected yeast, alcoholic fermentation can take place. When the alcohol reaches 5,5% b.v., the fermentation is stopped and the lightly sparkling sweet wine is sterile filtered to avoid further fermentation from occuring in the bottle. Then the wine is bottled and ready to drink. $20

Davide said the label brings the name of the estate; the original variety from which this wine was created is as ancient as the noble bust found on one wall of the estate building, bust that immediately became the Cascina Gilli logo.

Malvasia di Schierano, carries the distinctive signs of this wine district as well as being synonymous with the most authentic discovery of a local grape. The varietal selection of this type, with its unique and delicate aromatic character, distinguish it from the more common one called Malvasia Nera Lunga which is more intense and for this reason used for the production of the Malvasia di Castelnuovo Don Bosco. $20

The wines are a fantastic value for the money.

Cascina Gilli is looking for a distributor in the New York area.

Discovering the Wines of Perla Del Garda

Franco Bengasi and Marco Melzi of Wine Emporium, wine importers and distributors located in Brooklyn, opened a bottle of white wine from Perla Del Garda Winery for me to try.  When I told them how much I liked it, they suggested I stop by and visit the winery owner, Giovanna Prandini , who was attending the James Suckling Italian Wine event in NYC

Michele and I enjoyed the rest of the wine called  Lugana Superiore DOP “Madonna Della Scoperta” that night with dinner and Michele liked it so much she said I should buy some for us to drink at home.

The next day I visited Giovanna to taste her other wines and learn more about the winery.  Giovanna, along with her brother Ettore, founded the Perla Del Garda winery in 2006. There are about 35 hectares of vineyards just south of Lake Garda, between Desenzano and Sirmione. Perla Del Garda has been organic since 2013. A vineyard of about 8 hectares has been organically farmed since 2013 and with the 2016 vintage they produced their first wine called BIO, made with certified grapes of the Turbiana variety. They were the first winery in Garda to receive sustainability certification. Since the vineyards surround the winery, the maximum distance between the vines and the vinification is 1,000 meters. It is a gravity flow winery.

Lugana DOP “Perla” (in magnum) made from 100% Turbiana grown organically from the hills of Lonato dei Garda at 150 to 250 meters. The soil is calcareous clay of morainic origin and the vines are 20 years old. The vineyards are at 150 to 250 meters and the training system is guyot. Harvest is by hand in late August and early September. There is a thermal conditioning of the grapes at 10 C and then a careful selection of the grapes followed by a soft pressing. Fermentation is in temperature controlled stainless steel tanks at 15C for 8 to 10 days. Aging is in stainless steel tanks. The wine has hints of white flowers, lemon, peach, and pear with a touch of dry herbs and a note of almond. $28 for the 750 ml.

Lugana Superiore DOP “Madonna Della Scoperta” made from 100% Turbiana from the hills of Lonato dei Garda at 150 to 250 meters. The soil is calcareous clay of morainic origin and the vines are 20 years old. The vineyards are at 150 to 250 meters and the training system is guyot. Harvest is by hand in September. There is a thermal conditioning of the grapes at 10C and then a careful selection of the grapes followed by a soft pressing of whole grapes. Fermentation is in temperature controlled stainless steel tanks at 15C for 8 to 10 days. Aging is in stainless steel tanks and in barrels. The wine has hints citrus fruit, green apples, peach, with a hint of white flowers and a touch of almond in the finish. $22

Garda Merlot DOP “Leonatus” made from 100% Merlot from the hills of Lonato dei Garda. Vineyards are at 150/250 meters and the training system is spurred cordon. Soil is calcareous  clay of morainic origin. There are 5,000 vines per hectare and the age of the vines is 20 years. Harvest is by hand in September. There is a thermal conditioning of the grapes at 10C and then a careful selection of the grapes. Fermentation is in temperature controlled stainless steel tanks for 10 to 15 days. Aging takes place in oak barrels. The wine has hints of blackberry, black cherry and plum with earthy notes and a touch of dried herbs. $22

Lugana wines come from an area that is on the border between the two provinces of Brescia and Verona. The DOC region stretches along an area south of Lake Garda, the largest lake in Italy. The word Lugana may come from the early medieval word “lucus” meaning wood. In the past the area was covered by the Selva Lucana, a dense, marshy forest. Today the area is characterized by a very particular soil. The soil is white clay and limestone and difficult to till. This, however, gives the grapes here an extraordinary elegance and tanginess.D

Lugana wine can be described as being fresh with body and a good balance between sweetness and acidity. Lugana is made from the Turbiana grape, aka Trebbiano di Lugana, and may be related to Verdicchio.  There are 5 different styles of Lugana from sparkling to late harvest.  Lugana goes best with white meats or fish.

Pizza and Wine at Kesté Pizza and Vino

Kesté Pizza and Vino Wall Street has been one of my favorite places for pizza for many years now.  I know that when the owner, Roberto Caporuscio, is there, the pizza will be fantastic.  I also enjoy speaking to Roberto about his pizza and pizza in general. Roberto’s dough formula has evolved over the years. He now uses a biga (starter) and the dough rises for 4 days.

As soon as I walked into Keste the other day, Roberto gave me something to try. It was a fried ball of dough filled with mozzarella, pistachios and prosciutto.  It was delicious and got my mouth watering for what was to come.

I always let Roberto choose the pizza for me because not only does he know my favorites, but also I know he will give me something new.

We started with pizza Margherita made with smoked bufala mozzarella, one of my favorites.

With this my friends and I had a bottle of Nino Costa Arneis from Piedmont.

Nino Costa Roero Arneis “ Seminari” made from 100% Arneis grapes from 16-year-old vines located in Montá and Canale at 280 to 320 meters. The soil is very sandy and the vineyards have a southern exposure. After a 5 day maceration in stainless steel, the free run juice is clarified and fermented. The wine is then aged on the lees for 6 months with batonnage. Malolactic fermentation does not take place. The wine has hints of citrus, yellow fruit, pear, pineapple, a touch of fennel and a note of toasted almond.

The 7-hectare Nino Costa estate was founded by the Costa Family in 1857.  It lies on a hilltop overlooking the village of Montá to the west of the Tanaro River in the heart of the Roero zone. All of the vineyards at the Costa Estate are located within 1 mile of their newly built facility. The winery is organic.

Our next pizza was a Montanara with Neapolitan Ragu.  The pizza base is a disk of fried dough and it was topped with a classic Neapolitan slow cooked meat sauce and fresh mozzarella, then baked until the cheese melts.

With it we had a Nebbiolo from Costa Stefanino.

Costa Stefanino ( Nino Costa) Langhe Nebbiolo “Cabora” 2022 made from 100% Nebbiolo grapes from 30 year old vines situated in Montá at 280 to 320 meters. The soils are very sandy and the vineyards are situated South-West. Manual harvest. There is maceration on skins for five days followed by a seven day vinification with the cap submerged. Malolactic fermentation takes place after racking. The wine is aged on average for six months in barrique, and two months in bottle before release. The winery was founded in 1936. The wine has hints of cherry, strawberry, prune and figs with a note of violet and a touch of leather.

Next my friends and I shared a Pizza Sabrina with black truffles, four cheeses, and  imported Golfetta salame.  With it, we drank a Viviani Valpolicella from the Veneto.

Azienda Agricola Viviani Valpolicella Classico  2022 made from Corvina Veronese 70% and 30% Rondinella from a two hectare vineyard. The vines are 10 to 80 years old and the soil is limestone laced with fossilized pink coral and the exposure is southeast. Grapes are hand harvested. Fermentation is in cement tanks. The wine has hints of red fruit, cherry, aromatic herbs, spice, floral notes and a hint of almonds.

The estate consists of 10 hectares in the hamlet of Mazzano which has the highest elevation in the historic zone, 345 to 450 meters. The vineyards face southeast and are farmed with minimal intervention avoiding any synthetic products. The winery is organic-non certified.

Our dessert was a crisp pastry bowl filled with 3 flavors of gelato, vanilla, hazelnut and pistachio

All of the wines are available at Kesté and went well with the pizzas.  Try them next time you go.

Prosecco and Basketball

What do Prosecco DOC wines and today’s top NBA players have in common?  According to their promoters, with the start of the NBA season coming up, Prosecco DOC is a game changer for the occasion!  Since I am a big fan of both, I thought I would give it a try.

Valdo Prosecco DOC Marca Ora Brut NV  x Kevin Durant

The Valdo Winery is located in the town of Valdobbiadene in the heart of the sub-region Conegliano Prosecco di Valdobbiadene DOCG, in Veneto, Italy. The winery was founded in 1926 by the Society Anonima Vini Superiori and purchased by the Bolla Family in 1938.

Made from 100% Glera.  The vineyards  are at 80 meters and the training system is the traditional “Metodo Spalliera,” where the stems can be as long as one meter and are tied to a horizontal wire. Grapes are hand picked during the last week of September. Soft pressing and fermentation occur at 64F in temperature controlled stainless steel tanks. To obtain small and fine bubbles (perlage) a selection of natural yeasts is made. There is 3 months of Charmat-Martinotti aging, followed by 3 months in bottle before release. This is a sparkling wine with hints of peach, melon, pear and golden apple. $14.99

The name Valdo is short for the name of the region, Valdobbiadene. Sergio Bolla, one of the founders, wanted to make his Prosecco more accessible and easy to understand.  He shortened the name so that people could recognize it easily and remember it. Thanks to Sergio Bolla his Prosecco was known in the US starting in the 1950’s.

Valdo Marca Oro is a standout Prosecco DOC, crafted with the finest selection of Glera grapes harvested in the Veneto and Friuli regions. The crisp and harmonious taste of Valdo Marca Oro Prosecco DOC mirrors the smooth, effortless style of Kevin Durant’s game. The still wine is aged on its lees prior to secondary fermentation. It has hints of fresh citrus, honey and grapefruit with mineral undertones. $17.99

Brilla! Prosecco DOC Rosé  x Anthony Edwards

Once the wine has reached the required pressure, alcohol and sugar levels, it is chilled and cold stablized at -2/-3C, filtered and checked before bottling.                                                                  Prosecco DOC

Prosecco is the biggest selling sparkling wine in Italy today. It outsells Champagne in the UK, and sales of Prosecco increase every year in the United States.  Prosecco is produced exclusively in the area of northeast Italy between the Dolomites and the Adriatic Sea. The production takes place in two regions, the Veneto and Friuli Venezia-Giulia in 9 provinces.

Prosecco DOC must be made with at least 85% Glera grapes with the addition of Verdiso, Bianchetta, Trevigana, Petera and Gela Lunga. Prosecco Superiore Spumante may also contain up to 15% of Pinot Bianco, Pinot Grigio, Pinot Nero and Chardonnay.

Most sparking Prosecco is made using the “Charmat Method” in an autoclave (pressurized tank). For “metodo classico,” it is also permitted to carry out the second fermentation in the bottle.
