Listed below are five wines and the dishes that I paired with them. Plus an Amaro.
Greco di Tufo 2022 Cantina del Monaci made from 100% Greco di Tufo from an 8 hectare parcel in Santa Paolina, Tufo and Montefusco. (Campania) There are 3,300 vines per hectare and the exposure is northeast, south/southwest at 350 meters. Soil is of medium texture and the training system is double guyot. Average age of the vines is 15 years. Harvest is at the end of September. Fermentation is in temperature controlled stainless steel tanks and the wine remains in steel for 3 months before it is released. The wine has hints of citrus fruit, lemon, apple, almonds and a touch of sage.
Paccheri pasta with Calamari and tomato sauce
Lucente 2022 Tenuta Luce (Tuscany) made from Merlot (harvest September 3) and Sangiovese (harvest September 13) Fermentation is in temperature controlled stainless steel fermenters at 28C for 10 days. Maceration on the skins for 20 days. Malolactic fermentation is in stainless steel. Aging is for 12 months in new and old barriques then 12 months in bottle before release. The wine has hints of red berry fruit and blackberries with notes of black licorice and a hint of violets.
Prosciutto wrapped quail with sage, polenta with Parmigiano Reggiano, and braised artichokes
Taurasi 2017 Monaco Rosso made from 100% Aglianico from vineyards at 450 meters located in Montemarano. (Campania) There are 5,000 plants per hectare. After the harvest and maceration, the wine is fermented in stainless steel vats for two years and in new and very old oak barrels. The wine has hints of red and black fruits, cherries, plums and blueberries, accompanied by spicy and floral notes and a touch of vanilla.

Friularo 2018 Ambasciatore Conselve Friularo di Bagnoli “Ambasciatore” Conselve Vigneti e Cantine, located in Conselve, in the province of Padua.(Veneto) Made from 100% Friularo grapes. After a late harvest, the grapes are dried in a fruit cellar for a minimum of 24 months. Vinified using traditional techniques, followed by aging in large oak barrels for at least 24 months which gives the wine complexity and depth. It has an aromatic bouquet with hints of red fruit, violets, morello cherry and a note of spice. On the palate, it is soft, full and harmonious, with a persistent finish.

Beef Stew with Vegetables and Mashed Potatoes
Appassimento “Nero Oro” Nero d’ Avola Appassimento Sicily DOC 2022 made from a carefully selected blend of fresh and dried Nero d’Avola grapes. Caruso & Minini. Appassimento: In mid September the selection of the best Nero d’Avola grapes are picked by hand. The grapes are dried using two distinct methods depending on the area the grapes come from. Both methods have been used in Sicily for centuries. For the most gentle and natural appassimento, the grapes are left on the vine for longer than usual through the dehydration on the vines. An alternative method is to let the grapes dry on racks for 15 days. These grapes are dried until they have lost 10 to 15% of their original weight. The vinification process is very gentle. Destemming is followed by a particular soft pressing. There is frequent pumping over in the early part of fermentation after which malolactic fermentation takes place. This is a very intense wine with flavors of cherries, blackberries, blueberries, a touch of dry prunes and a note of licorice.
Italian Pork Sausages and Spareribs in Tomato Sauce with Broccoli Rabe
Amaro Laguna Nord (Venezia) Con Assenzio Marino This is a natural herbal Amaro made from the infusion and extraction of 42 select botanicals according to the old Venetian liqueurs method codified in the Capitulary of the Apothecaries of 1258. There is 45 days of infusion of different botanicals followed by blending and a 180 day refinement before bottling. The amaro is bittersweet and complex with hints of sea wormwood, aromatic herbs from the northern lagoon of Venice, oriental spices, bitter orange with a hint of anise and balsamic notes. It is the perfect way to end a meal.
